Healthy Minestrone Soup for Rainy Days

People: 2-6 people

 

All you need:

1l hot vegetable stock

400 g tin chopped tomato

100 g thin spaghetti, broken into short pieces

4 tbs pesto

350 g frozen mixed vegetables

Optional: grated parmesan cheese

 

Step-by-Step Guide:

  1. Bring the stock to the boil with the tomatoes, then add the spaghetti and cook for 6 mins or until done. 
  2. A few minutes before the pasta is ready, add the vegetables and bring back to the boil
  3. Simmer for 2 mins until everything is cooked
  4. Serve in bowls drizzled with pesto and oil! You can finish it off, by sprinkling on parmesan (for all the cheese lovers)
